Toss beef strips with cornflour and 1 tbsp soy sauce. Set aside 5 minutes — this tenderises the meat.
Mix remaining soy sauce, oyster sauce, and sesame oil in a small bowl.
Heat wok or large pan over highest heat until smoking. Add oil.
Sear beef in a single layer for 60–90 seconds without stirring, then toss once and cook a further 30 seconds. Remove and set aside.
In the same pan, stir-fry broccoli with a splash of water for 3–4 minutes until bright green and tender-crisp.
Add garlic and ginger, cook 30 seconds. Return beef. Pour sauce over and toss everything together for 1 minute.
Top with spring onions and serve over cauliflower rice or with a small portion of brown rice.
High heat is non-negotiable for stir-fry. A lukewarm pan steams the beef instead of searing it — you lose all the texture.
