Ingredients

6 large egg whites (or 200ml carton egg whites)
1 whole egg
80g smoked salmon, roughly torn
30g cream cheese (light)
1 tbsp fresh chives, chopped
1 tsp olive oil
to taste black pepper and lemon juice

Method

Whisk egg whites and whole egg together with a pinch of salt and black pepper.

Heat olive oil in a non-stick pan over medium-low heat.

Pour in eggs and leave undisturbed for 30 seconds, then gently fold with a spatula — do not stir constantly.

When eggs are about 80% set (still slightly glossy), remove from heat immediately — residual heat finishes them.

Fold in cream cheese and smoked salmon pieces. The cream cheese melts into silky ribbons.

Finish with chives, a squeeze of lemon, and serve immediately.
