Lean turkey mince with crunchy vegetables in a light ginger-soy sauce. Low calorie, high protein, on the table in 20 minutes.
Heat coconut oil in a wok over very high heat until smoking.
Add turkey mince and cook for 4–5 minutes, breaking up with a spoon, until browned.
Push turkey to the side, add garlic and ginger, cook for 30 seconds.
Add red pepper and sugar snaps. Stir-fry for 3 minutes keeping vegetables crisp.
Add pak choi, soy sauce and sesame oil. Toss everything together for 2 more minutes.
Serve immediately — optionally over cauliflower rice to keep it low-carb.
The secret to good stir-fry is extreme heat and not overcrowding the pan. Cook in batches if making a larger portion.
