Drain silken tofu thoroughly. Pat dry with paper towel.
Blend tofu, protein powder, cacao powder, maple syrup, vanilla, and salt in a high-speed blender or food processor for 2 minutes until completely smooth and silky.
Taste and adjust sweetness. The flavour intensifies after chilling.
Pour into 4 small glasses or ramekins.
Refrigerate at least 2 hours — overnight is better. The mousse firms up considerably.
Serve topped with raspberries and chocolate shavings.
Silken tofu is the secret. It has virtually no flavour and creates an uncannily smooth texture. Do not substitute firm tofu.
